4/30/2010 - food and drink recipes

food used from Farmers' Market at the Garden - mint, (mixed?) lettuce greens, dried (shiitake?) mushrooms, (and our own leek tops and cilantro)

Lettuce Soup with Cilantro and Hot Sesame Oil - Clean Food by Terry Walters - p 45 - We used pomegranate vinegar, b/c I couldn't find ume plum vinegar. -  J says "light and tasty", "great way to use lettuce"

Mint Julep #1 -J said that it was good but I shouldn't waste his single barrel whiskey on mixed drinks.

Instructions

In electric blender, blend on high for a few seconds, until leaves are reduced. Strain into silver tumbler packed with shaved ice, add more Bourbon whiskey to saturate the ice, garnish with a sprig of mint. 
 


Prichard's Muddled Mojito - J says "delicious, refreshing, sweetly round on the palette" - ok :)

2 oz. Prichard's Crystal Rum
3 Lime Wedges
3 Lemon Wedges
5 to 8 Fresh Mint Leaves
1 oz. Simple Syrup
Place lime wedges, lemon wedges and simple syrup in a glass.  When muddling, press ingredients against the side of the glass making sure that only the pulp is pressed and not the rind of the limes and lemons.  After muddling limes and lemons, add mint leaves and gently press to release oils but not mangling leaves.  Add rum and shake gently for ten seconds.  Fill glass with ice and pour mixture over ice and top with a little soda water.

PAMA Caipirinha - I cheated on this one...no mint, but I couldn't resist. It's not as good as the PAMA Mojito (4/29/2010), but it's pretty darn good. The mojito is a bit weaker and includes club soda, almost like drinking a cherry 7-up.

Ingredients:

  • 1/2 oz. PAMA Pomegranate Liqueur
  • 1 1/2 oz. Aqua Luca Brazilian Cachaca
  • 3/4 oz. Simple Syrup
  • 1/2 a Lime quartered

Instructions:

Muddle limes and simple syrup thoroughly. Add Aqua Luca, PAMA and ice. Shake vigorously. Pour entire contents, including ice, into a rocks glass. Garnish with a lime wheel.

Sweet Potato, Corn, and Kale Chowder - Clean Food by Terry Walters - p.48
We used 1/2 chicken and 1/2 veg. stock, instead of all veg. stock. We also used milk from Evergreen Farm, instead of rice milk. Drizzled olive oil on top. (I'm not sure why Jason used the cheap stuff when we have expensive stuff for exactly that purpose.) This was so good that I'd put it up against any similar creamy soup/chowder that we have had at nice restaurants/wine dinners, etc... 

Crystal Rum and Tonic - I made this in one of my cow glasses and J said I could increase the rum to 2 oz. and also increase the mint.
1 oz Prichard's Crystal Rum
A slice of lime
A sprig of fresh mint
Your favorite tonic
Pour your tonic over ice.  Squeeze in the lime and add fresh mint.  Serve in a tall, cool glass full of ice.

PAMA Mojito - It's going to be hard to top this one.

Ingredients:

  • 1 oz. PAMA Pomegranate Liqueur
  • 1 oz. Premium White Rum
  • 1/2 oz. Lime Juice
  • Club Soda
  • Simple Syrup
  • Mint Leaves

Instructions:

Muddle 2 tablespoons of simple syrup and 6 to 12 mint leaves. Fill glass with ice and add PAMA, rum and lime juice. Top with a splash of club soda. Garnish with mint leaves and pomegranate seeds.

Evergreen Farm: 1/2 lb. butter - $5 + $5 share, 1/2 gal. milk - $4 + $2.50 bottle deposit, 1 doz. eggs - $4

Mathis Creek Farms: whole hog sausage (1 tube) - $4.50
